The turn command is used to turn things that can be turned. The turnable might be a book, a knob or dial, or some other thing. The specific page or setting to which the thing is being turned is called the 'extent'.
There are a couple of ways you can use this command:
turn - turns the first turnable that you are holding by the default amount
turn <turnable> - turns a specific turnable being held or in the room by the default amount
turn <turnable> <extent> - turns the specified turnable to the specified extent
turn <turnable> +<increment> - turns the specified turnable by a certain amount from its current value
turn <turnable> -<increment> - turns the specified turnable back by a certain amount from its current value
